Side of salmon with a light salmon mousse, wrapped in puff pastry with fresh mango, mint salsa

Crispy saffron risotto cake with sugar roasted tomato, wilted spinach and mustard aioli


Cold


Wild summer rocket with, balsamic strawberries and olive oil

Sliced beef tomatoes, cracked black pepper, avocado, fresh lemon juice and olive oil

Beetroot, blue cheese, sweet orange dressing, beetroot leaves and toasted walnuts

Wild rice salad with smoked trout, sun blushed tomatoes, sautéed wild mushrooms, and salsa verde

Char grilled courgette and pepper salad with toasted cumin seed dressing and fresh coriander

Selection of breads


Desserts


Pavlova with soft vanilla cream topped with strawberries, raspberries and white chocolate shaving

Bittersweet chocolate tart with macerated cherries, cocoa biscotti and creme fraiche

Mango, orange and pineapple salad with mint syrup
